Instant Pot meatloaf and potatoes

This Easy meal is a one pot Instant pot meatloaf and potatoes that will blow you’re mind. The best damn meatloaf I’ve ever had not to mention the Quickest!

This delicious classic homemade meal is cooked all together in your pressure cooker so that everything is done at the same time! No more figuring out the timer to start cooking your sides because this meal is a One pot wonder!

This meal like my other meals on my site is easy, quick, and doesn’t require any fancy ingredients. This recipe uses things you most likely already have in your pantry and fridge. A meatloaf is pretty simple to make and the possibilities are endless if you want to walk on the wild side and do something like cheese stuffed or ham and broccoli meatloaf. But be sure to try out this easy instant pot meatloaf and potatoes first.

But today, we are going to tackle the traditional meatloaf that your mamma or grandma cooked at least once every couple of weeks or so. Also, what is meatloaf without mashed potatoes? I mean you really cannot have one without the other. If you don’t want potatoes you can always opt for cauliflower mash, I love cauliflower mash and my kids really can’t tell the difference when I make it super creamy with butter and sometimes gravy.

I’ve broken down this instant pot meatloaf and potatoes recipe so you can easily follow along and make your instant pot meatloaf and mashed potatoes tonight!

First Peel (you can leave the skins on if you like they’re packed with tons of nutrients) and chop your potatoes into medium sized cubes. Your potatoes don’t need to be small cubes but I wouldn’t just quarter the big potatoes. Think a little bigger than a golf ball size.

Second Place your potatoes into the instant pot and add your broth and garlic with the potatoes and place the trivet on top.

Next assemble your meatloaf! You can make one big meatloaf or you can use the egg mold and make meatloaf bites like we always do because they’re cuter and we love bites plus I think my kids eat more when I make the bites… Win/Win

Almost there! Then you either put the meatloaf on some aluminum foil, folding the sides (this catches the juices) or you place your meatloaf mixture into the molds. Place the meatloaf on the trivet and close the lid.

Make sure your valve is sealed and set your time to 30 minutes. When it is done let it naturally release for 10 minutes then quick release rest of steam.

When you open the lid use a meat thermometer to make sure the meatloaf reads at least 160 degrees. (If you’re doing ground turkey it should be at least 165 degrees)

If it needs more time put the lid back on and set for another 10 minutes (I’ve never had this happen but if you use different ingredients this may affect your cook time)

If you didn’t use the molds use a turkey baster to remove some of the drippings so you don’t accidentally splash them onto you when taking the meatloaf out of the instant pot.

Place your (sugar free) ketchup onto the top of your meatloaf and you can broil it in your oven if you want to get the caramelized affect. This is totally optional and we’ve done it and we haven’t it doesn’t seem to be any difference with my family.

Making the mashed potatoes

While your meatloaf is broiling or just let it rest on a platter go ahead and make your potatoes.

You don’t even have to take them out of the instant pot! How cool is that? Less dishes means less mess and less cleaning this mamma has to do. YEEESSSSSS.

Add your butter, salt, and pepper and mash. Add milk and sour cream to your liking of consistency. If you are doing Weight Watchers you can always substitute your sour cream with 0 Fat Greek yogurt and use skim milk and whipped butter. This makes this recipe super low in points!

For the purple plan if using 95% lean ground beef, Greek yogurt, skim milk, and whipped butter the points equal to 6 points points per serving. You can always add a side of veggies for more zero points!

Instant Pot Meatloaf and Mashed potatoes

You will never make meatloaf in the oven after making this delicious meal in the instant pot. This is a One pot wonder! Everything is made in the instant pot AT the SAME TIME.

Equipment

  • Instant Pot
  • Trivet that comes with instant pot
  • large bowl
  • Egg mold (optional)
  • Aluminum foil (if not using egg mold)

Ingredients

For Potatoes

  • 5-6 good size Russet potatoes peeled (if desired) and chopped into large dice
  • 2-3 cups Low sodium chicken or vegetable broth enough to almost cover all potatoes
  • 4 cloves minced garlic this is if you want garlic mashed potatoes

After Potatoes are done add these ingredients:

  • 1/4 cup butter (whipped if doing WW)
  • 1 TBSP salt and pepper to taste
  • 1/4-1/2 cup milk (skim if doing WW) more/less for consistency you want
  • 1/4 cup sour cream (0% Greek yogurt if doing WW)

For Meatloaf:

  • 1.5-2 lbs 93% or above ground beef or ground turkey
  • 1 TBSP Garlic powder
  • 1 TBSP onion powder
  • 1 TBSP salt and pepper
  • 1 tsp Italian seasoning
  • 1/2 cup diced onion
  • 1 TBSP Worcestershire sauce
  • 1 Large egg
  • 1 cup rolled oats
  • 1/2 cup ketchup (sugar free if doing WW) more for topping if desired

Instructions

  • Peel (if desired) and chop potatoes into large dice
  • Place in instant pot
  • Pour broth on potatoes
  • Place garlic in instant pot with potatoes if doing garlic mashed potatoes
  • Set trivet on top of potatoes
  • Place Ground beef or turkey into a large bowl and add all ingredients for meatloaf into bowl
  • Mix with hands (If mixture looks too wet add more oats, if it looks too dry add another egg)
  • Place meatloaf mixture on aluminum foil and fold aluminum foil up on each side and shape your meatloaf how you like OR place in egg molds (This recipe yields two molds worth)
  • Place meatloaf on trivet and place lid on instant pot making sure valve is sealed
  • Push manual or pressure cook and set time to 30 minutes.
  • Let it naturally release for 10 minutes then let out rest of pressure
  • Take meatloaf and trivet out of instant pot
  • Optional: You can put extra ketchup on the top of the meatloaf and place the meatloaf into a pan (pop out of molds if using and place onto a pan) and place in broiler for a few minutes but Keep an eye on it because it doesn't take long.

Time to make your mashed potatoes!

  • Add your butter, sour cream (or Greek yogurt), salt and pepper to your potatoes and mix In the Instant pot! No need to dirty up another dish. Add milk a small amount at a time (if they are too dry add more milk)
  • Slice meatloaf (or pop out of molds) and serve!

Notes

You can use Green peppers as well with this recipe we have used them almost every time. Just dice them up and place them in the meatloaf mixture with all the other ingredients. To make this Weight Watchers friendly swap out the sour cream with 0% Greek yogurt, Make sure your broth is low sodium, use sugar free ketchup, use skim milk instead of 2%, use whipped butter instead of stick, either use ground turkey or 93% and above ground beef.
