Mississippi Chicken

Love Mississippi Chicken but hate the calories that come with it? In this Healthy Mississippi Chicken version we cut out the au jus or gravy, believe me, you won’t miss it. Plus we make a couple of substitutions to make this a weight watchers friendly version! Only 3 smart points per serving!

What’s funny is that I grew up in Mississippi but I don’t ever remember having Mississippi chicken. I had Mississippi roast, but never remember having this delicious Mississippi Chicken! How is that possible? Grandma? Why is this?!

I started making this Healthy Mississippi chicken dish a few years ago when I came across it on Pinterest and ever since then my whole family can’t get enough! What makes it even more amazing is that sometimes I use chicken breasts and sometimes I use thighs just depends on what we have and or what everyone is in the mood for. My hubby likes the thighs better and my son and I like the breast version better but Both are amazing!

How can this recipe be Weight Watchers friendly? Simply use chicken breasts and whipped butter! That’s really all of the “substitutions” you will need. Maybe this should just be titled Mississippi chicken with whipped butter because that’s really all you’re changing. Chicken breasts is 0 smart points and the WHOLE ranch packet is only 2 points (making a serving 0 points) on the purple plan. Using whipped butter instead of regular salted or unsalted butter you save 3 points per tablespoon. At the end I will list the points for each green, blue, and purple plans. This is a super low smart point dinner on all of the weight watchers plans.

Healthy Mississippi Chicken

I have included the oven and instant pot versions of this healthy Mississippi Chicken because I have tried both and LOVE both of them. I also want to try the air fryer but haven’t yet so I will update this post when I do try it.

One of the Main reasons I love this recipe is because it only uses 5 ingredients and that is counting the spices! This recipe is so easy you just throw everything together and viola and amazing, juicy, fancy dinner that even your kids will enjoy.

Ok, Here is the Oven recipe used for this Healthy Mississippi Chicken:

This is super simple and requires 0 prep besides pre-heating your oven!

Ingredients:

4 Boneless skinless chicken breasts 3 green 0 blue 0 purple

1 package of Hidden Valley Ranch seasoning

1 Jar of banana peppers, drained

4 Tablespoons of Land o’lakes Whipped butter

1 Cup of Fat free shredded Kraft mozzarella cheese

1/2 Cup Fat Free shredded Mexican cheese

Directions for Oven:

Preheat oven to 350 degrees

Pat chicken dry and place in a 9×13 baking dish

Sprinkle packet of ranch evenly on your chicken

Pour jar of banana peppers all over chicken

Place 1 TBsp of butter on each breast

Sprinkle cheeses on top

Bake for 30 min or until chicken is 165 degrees internally

Broil for a few minutes to get cheese a nice color

As you can see we like our cheese a bit on the brown side because of the crispys! Make sure you keep an eye on the healthy Mississippi Chicken in the broiler it doesn’t take long at all! Pretty Easy right?

Instant Pot Healthy Mississippi Chicken

This version of Healthy Mississippi chicken is done in the instant pot so you can enjoy it shredded on top of rice, buns, tortillas ,etc. This is a Quicker way to make this meal

Equipment

  • instant pot pressure cooker

Ingredients

  • 4 Chicken breasts
  • 1 packet Hidden Valley Ranch seasoning
  • 1 16 oz. jar banana peppers keep juices this time DO NOT DRAIN
  • 1/2 cup water
  • 4 TBsp whipped butter
  • 1 cup Fat free Kraft shredded mozzarella cheese
  • 1/2 cup Fat free shredded Mexican cheese blend

Instructions

  • First, if your breasts are really thick try cutting them in half if you can and sprinkle with Ranch packet
  • Place all other ingredients into instant pot with chicken and make sure valve is set to sealed.

  • Push manual or pressure cook and set to 8 minutes
    valve set to sealed
  • After the instant pot is done let it naturally release for at least 5 minutes
  • Do a quick release to let out remaining pressure
  • You can shred and use for many things or leave whole
  • If you want to achieve the golden top place chicken on pan and place in broiler for a few minutes. Make sure not to burn!
